Baked falafel – tasty and healthy

just made these for dinner.  I used 2x the amount of flour called for, and naturally used spelt flour.  I bet you could use any flour in there, or even bean flour for a denser texture.  They look like oatmeal cookies!

Served with white bean and olive hummus, chopped jicima and carrots and a side of while grain rice. yum.
